To disable Overtime Notifications you can disable them in the Payroll Settings page. Which can be found at Settings -> Business Settings -> Payroll Settings

To disable per employee. Navigate to the Employee and click on the Admin tab

Then modify their notification settings to the maximum per hour/week (168 / 24):
